12volt lights dim with 120v load cycles

We just got a new Insta-pot pressure cooker/crock pot and when it cycles on the 12v lights dim. It made me wonder why a 120 volt load would change the brightness of a 12 volt light when it would have to go through a converter and battery to do so.

Insta-pot is 1000 watts

Depending on what else is running of 120VAC, you can get a voltage drop on the 120VAC line which can impact the converter output. This can reduce the converter output and result in a change in the 12V light brightness.
