AC starts and stops before compressor kicks in

My front AC on my 2015 Blue Ridge 3600RS is a Dometic Penguin 13.5K that once the room reaches temperature and the unit cycles with system in AUTO it will sometimes start on fan, run about 30 seconds to a minute, the compressor does not come on and shuts down. It will do this 2 - 3 times and then the compressor will come on. If I drop the temperature down a degree or two the compressor will come on with the next try (or if I catch it when the fan comes on). Not sure if the issue is the thermostat or the start capacitor or I am low on Freon and not pressurizing through the compressor. Other than that the unit seems to work fine. It has done this since I have owned the rig. Service a few years ago said nothing wrong with the AC.

This may sound a little weird, but try covering the thermostat with a Tupperware bowl taped over it. It could be getting air blown directly on it causing the issue. If it works properly then, go to HD and get a thermostat cover/lock.
