I would say yes. If you look at the installation manual in has sections on analog, LCD, and the CCC thermostat. If it will work with an analog, you should be able to change it out for an inexpensive home thermostat for both the AC and furnace. I did it in a Hilo I had about 10 years ago. It was pretty straight forward. Check the installation manual for your exact model AC before you order one though.
Look at page 8 on this PDF from the Penguin II manual. It shows the wiring for different thermostats. Figure 11 on page 8 should be what you want for a general residential thermostat for heat & ac.

I thought I had a photo of the one I installed, but I can't find it. I think I paid like $25 for it at Home Depot. It was a basic non-set back thermostat, but it did have a LCD display (not lighted). Worked great on both the AC & Furnace.
