Definitely a humidity issue. What I've found is that door seals often have small gaps that allow outside air to infiltrate and bring more humidity into the freezer. Another source if from food itself.
If food is sealed well in either manufacturer's container or in ziplock bags, etc, one source of humidity is under control. Would be a good idea to check door seals. If there is a "fan shaped buildup of frost next to where the door seal seats, that is where the air is leaking. Could be warped material at freezer opening. Sometimes a layer or two of paper towel strip inserted behind the door seal in this area helps force the seal tighter in this area.
I've found that ice buildup in my freezer has been minimized once I started the habit of firmly pushing the door closed after accessing the freezer. Just closing it until the latch "clicked" didn't seem to be enough. I now close, click, push, then go about my other tasks.
