How close to level?
How close to level do I need to be in order to run my refrigerator? Is 1/2 to 3/4 in the bubble safe?

Assuming that you have an RV type refrigerator and not a residential type, the Dometic owner's manual says level the vehicle so it's comfortable to live in.
One thing to keep in mind - if you park it with the refrigerator running be sure it's that level or turn the refrigerator off. There has been at least one post of someone who left their RV parked for hours on a slope resulting in a ruined refrigerator. The problem is that the refrigerator works by phase separation of the fluids and they have to drain down the tubing. If it's not level enough some of the tubing may not drain well, allowing solids to permanently plug the tubing.
The manual states that the rocking movements of RV's are enough to keep things moving, so you don't have to worry about long climbs in mountains, etc.

Just to clarify, were you saying that 1/2 to 3/4 of the bubble on center might be enough of a slope for solids to build up?
I used to have a 5th wheel and could get that thing dead center every time but the motor home is a little trickier. I'm working on it though.

"Enough of a slope" means enough for the fluids in the tubing to drain properly, and NOT allow solids to build up. And yes, 1/2 to 3/4 bubble should be fine. Again, the guideline is to have it level enough for comfortable walking.

There's a margin for error, but like already stated so long as it feels fine walking around it's good.
With the fridge off you can store it at any angle needed but before firing the fridge up get it level and let it sit a day first.

If the leveling is off a bit, will that affect the temp? I've been having issues with my fridge not getting as cold as it should - about 45+degrees. I've tried everything (it's a new coach) so I'm wondering if I just didn't have it level enough. It's on my side yard now and I just leveled it perfectly and the unit is on so I guess I'll see tomorrow. Thanks

The compass app on my iPhone 5S actually has the app - of course my 10 year old son pointed it out for me (what can I say, it's work issued)
Just checked it and it's at zero degrees. Let's hope this works...
