Question How does this happen, ice maker?

We have a residential LG refrigerator in the coach. We are plugged in. No city water connected. Fresh water tank full, and pump is off. Fridge is turned on.

The question - - How did we end up with the ice maker totally full without a water source operating?

Have you ever been connected to city water or had the pump on?
Unless you have a shut-off valve on the ice maker line, each time you pressurize the water system, it's going to fill the ice maker.

Nope. In the week that we've had this coach, no city water hooked up, and the pump has been turned on once for less than a minute. We have the same fridge at home, and it takes many cycles of the ice maker over many hours to fill it to the top like it is now. I'm wondering if the fridge has a separate pump that's on 24/7 drawing water from the tank.

It could happen with the water pump shut off if the water heater has not been purged of air. If the water heater was empty and you pressurized the system the water heater will act like a pressure tank and could hold enough water and pressure to make several loads of ice in the ice maker.

I have never known a fridge to have a water pump on it so I bet there is something pressurizing the water system.

Another thought, is it possible that at least some of the ice was already in the bin?

Unless you actually open a faucet and let all the pressure out, your water system could remain pressurized for some time.
It's a sign you probably don't have any leaks!!
Time to make some frozen margaritas!
