You can if you are at a campground with iffy power? It does not hurt anything to leave it on as most inverter have a sense circuit that realizes you are on shore power and just passes the shore power thru. The inverter is in standby mode and will sense of shore power goes away and then the inverter switches into active mode and supplies the power from your battery.
I guess that only really matters if you have a residential fridge. I sometimes do and sometimes don’t. If I’m just stopping overnight I usually leave it on so in the morning when I’m leaving from a one stop overnight I don’t forget to turn it back on.
