Magic Chef oven does not hold set temperature

We just returned from our maiden camping trip in our 2022 MiniLite 2109s. On two occasions, first with a pizza and second with frozen fries, the oven would heat up to temperature but then begin cooling down. Temperature was monitored with a digital meat thermometer with a remote wired sensor. The main flame would be at full flame until the oven reached temperature, then would reduce to a minimal flame while the oven dropped in temperature. I monitored this with the oven set for 400 and watched it drop to 360 before I intervened and manually kept adjusting the thermostat control knob to regulate the temperature so we could have our dinner.

Pizza was on the rack, no pan. Fries were on a foil covered cookie sheet. No pizza stone or unglazed tile in the bottom of the oven.

Does anyone have any thoughts on why this oven won't maintain the temperature? From research, the thermostat should increase / decrease the only burner flame to keep the temperature regulated. Something definitely isn't working right, unless a 40+ degree temperature swing is normal operation for these ovens.
