Igniter will still function with air in the line. Burner may light and stay on for a bit, then another air pocket will hit and burner will go out. May happen several times before the air is purged. Other appliances will continue to work as they are less prone to burnout due to air pockets. They move gas at a higher rate than your refrigerator so air pockets are less noticeable. Each is on it's own line, that splits off of the main line at some point. Running the stove or water heater will help purge the main line, but air will still trap in the branch line to the fridge.
As for the guess as to the material on the back side, I like the suggestion above about the drain line. If the refrigerator is working correctly then that would be my next investigation.
