There are literally hundreds of threads on this and tons of instructional videos on the Internet.
I bought a Honeywell for $12 and replaced mine.

Just do an internet search for "Dometic digital thermostat for RV" and you'll find a wealth of options and related installation/operation videos. While some like to adapt residential thermostats, I'd recommend paying a bit more for a genuine Dometic replacement so you'll have a simple wire-for-wire installation. Look for a model similar in size so you'll be more likely to use the same mount holes. If you can get the model number off your current thermostat you might be able to go to the Dometic website and find the proper upgrade.
I did the same for my Coleman Mach A/C and the difference is very noticeable, well worth the cost and effort.

Thermostat not reading properly.

Bought this for $17 + change. The only difference from the OEM is that you only get one AC fan speed. Click image for larger version
