I would not run the fridge sitting in storage if it was not within a couple degrees of level.
I used to install refrigerators, The manufactures required that new one sat in place for a half hour before startup. This was so that when tilted on its side it has time to drain its oil back. but sitting slightly unlevel won't hurt the compressor, it has to do with how the door closes and seals. DR

New fridges use a different oil and refrigerant than the old days. New designs have the compressor at the lowest point and closest to the backside. Thus transporting a fridge or freezer on its back is perfectly safe and OK.
As to RV fridges, going down the road, around curves, and up and down hills averages out to be "level".
Once at the campsite or storage site, yes, level +/- 2 degrees is suggested. it is less critical with electric power, i.e. 120 volts or 12 volts. If one is using LP, then YES, level becomes very important.
