Southern Florida suggestions

We are meeting up with our daughter and grandkids at Disney World for a few days this January. We were hoping to continue down to the Keys afterwards but everything is booked there. We thought that we might go instead to either Big Cypress National Preserve or to the Everglades NP before following the gulf coast to New Orleans for Mardi Gras. What do you think of Big Cypress and the Everglades NPs?Which park do you recommend or should we do both? Is there anything else in south Florida that we shouldn’t miss? We’ve never been further south than Disney World. We’re praying for a cancellation for Key West but we want an alternative plan if we are unsuccessful. We like state and national parks but are open to any suggestions. Thank you.

We usually like to stay at John Pennekamp State Park in Key Largo on our way down to the Key West.
