I have your same truck and I pull a FR Cherokee that is 6200lbs dry. all my numbers are within limits. I use an equalizer hitch and a few other upgrades and it does perfect. LT tires are a must in my opinion
You must be really searching out the weight police crowd if you have a 5.7 hemi and are worried about towing a 5k trailer. your truck is probably rated at twice that.
I towed an 8k pound 5th wheel with no problems with my ram 1500 before upgrading.
Interesting - I am in a similar truck and the payload limit of 1312 lbs is what is killing me. I'm a newbie but on my post they are telling me hitch weight is going to be 10-15% of the GVWR of the trailer. The 23MK has a GVWR of 7608 so I guess that would be 760 - 1141 lbs added to you payload. Plus whatever the weight of the WDH??

But then you see a lot of this sort of thing and I wonder if I am perhaps overthinking and over-interneting this whole thing? Real world experience and all that.

Just because someone tows overweight and says all is good doesn't make it right. Anyone with a small calculator could punch in the numbers and see he's was overweight.
I have a 2018 23MK and tow with a 2011 Ram 1500 4WD, 5.7Hemi Quad cab with Trailer tow equip, I do not go to mountains but have towed it in NC , SC with no problems

Mine is a 2017 and the payload is 1542 lbs. Yellow sticker on pillar says combined weight of passengers and cargo should not exceed 1542 lbs ? I'm assuming this is payload . Picked up the trailer today and it towed good a little pull when being passed but lots of power and was around 2000 rpm on Hwy doing 60 mph.
My TRUCK is only rated to pull 8000 lb trailer so I would not want to pull anything heavier . Safety is my main priority . And not being stressed when on vacation . I have seen several 5 th wheels being pulled by 1/2 tonnes and it isn't pretty
