Does anybody find it odd that the combined axle weight ratings are 11400 lbs, but the GVWR is 10000 lbs?

The other sticker is there. I have a 2015.5 and I had to get onto the ground to see it..

The 10k is the limit they set to keep it as a non commercial vehicle in the eyes of the US dot requirements (10,001 lbs or more registered weight, actual weight or combination weight).. Might not matter to us as non commercial users but in some states just having a truck over the US dot sizes makes you a commercial vehicle even if you are just a private vehicle.

I weighed my truck and fifth wheel a while back (9/16/16) and these are the numbers I got. I did not have the Harley in the back at the time.

Those numbers for your truck axles would indicate you are over the GVWR rating of some 1 ton SRW trucks let alone a 3/4 ton.
