So being frustrated with the direction of these faucets and not wanting a member of the family to get scalded I decided to change out the faucets. I wanted to keep the same color so as I looked for them it became clear that Dura was the maker of these faucets. I gather they do a lot of stuff for RVs. I got them on Amazon. They are pretty cheap -

So when I look at the directions it clearly says: that for "knob handles" you are supposed to turn the knobs counter-clockwise to get water to flow, but that for "lever handles", hot water lever goes counter-clockwise but cold water lever goes clockwise to get water.
So clearly what happened on my RV and it sounds like others is that they put knobs on the faucets that were intended to be used as lever faucets which is why one knob is correct but the other is not. Here's their web site if you want to complain:
