When you plug into shore power does the furnace run up a propane or like does it switch to a heat pump?

Most RV furnaces operate on a combination of 12vdc for the electrical system (blower motor, controls,etc) and LP gas that provides the heat. You may have either heat strips or heat pumps in your roof air and they run on 110vac. Your furnace can run on battery power alone or combined with shore power or gen set. Your roof air units can run only on shore power or gen set.
