The thermistors they use in these t-stats aren't the highest grade and therefore can be off several degrees. You could buy a sack full of thermistors and find one that is closer to the actual temp, or you could series a small resistor with the thermistor if it's reading too high, or you could just live with it and adjust the setpoint off the number of degrees the t-stat is off.
I've looked at those units and don't remember seeing a pot to trim the thermistor input with. It would certainly be nice if there were.
