Subscriptions
Wondering if something has recently changed with the forum that would subscribe me to all threads I post to?
I don't recall a setting as such nor have I been able to find a way to opt out other than monitor my subscribed threads list and delete every few days.

On the site, there's a setting for it - User CP --> Edit Options. Then the second box is Messaging & Notification. It has this "Default Subscription Mode" option:

I think there's a setting in the App which is likely separate from this one.

I've been getting that too. It seems to be happening to me only in the app. I will investigate further as I am not set to subscribe on either platform but am getting automatically subscribed to threads I post in when using the app.

Yes it's the app. I took a screenshot of my settings and did two tests both with the app and the full site with my computer.
With the computer at the full site, I am set to not to subscribe to threads and it did not subscribe when I posted
On the app, I am also set not to subscribe. However after I did a post using the app, the subscribe flag showed I was subscribed now, and it showed up in my subscriptions on the full site. May be a bug. Let me contact the tech team.

I've passed this along to app developers ... in the meantime an you try restarting the app or even uninstalling and then reinstalling to see if this helps?

After yesterday's delete and reinstall, the app won't even load more often than not.
