Any downside to keeping water hot?

Is there any issue to leave the water heater switch on all the time I'm camping or should it be shut off when not needed?

Doesn't hurt but for the short time it takes to heat I leave ours off till it's needed.

Leave it on. It will only kick on when the existing water is used or starts to fall below the minimum temperature
