We have been doing an annual family camping trip to the Upper Peninsula of Michigan in August the last two years, and have it planned for this coming August as well. It's 'my side' of the family and we aren't as big as my wife's side. However whenever we get together we ALWAYS do a 'trash can' turkey (or two).
We brine it for a couple days prior to cooking. We follow a simple recipe and cooking instructions. Whenever we do it at a camp ground we always have people stop and give us the "What the..." look, but whenever we pull off the can, and show the turkey and give out tastings, people always LOVE it.
You take a metal rebar about 2' long and drive it into the ground so it's sticking up about 16"
Lay 20' of aluminum foil around said stake
Place 20lb turkey vertically onto stake
Cover said turkey with a 20g aluminum trash can (it's only use is for cooking so buy new and burn off the galvanization on the inside)
Put 20lbs of charcoal around the aluminum foil, and on trash can, then light said charcoal.
Once charcoal is 'lit', let it sit cooking for 2 hours and 20 minutes
remove charcoal, trash can, and have a platter ready for turkey. Cut turkey (if needed) and eat!!
