If you think $300th is too much to spend all day and dealing with all things that can go wrong, you need to quit now and save yourself a lot of pain and suffering. It’s not a cheap sport and you gotta pay to play!

First of all, if I was anywhere close and had a 5th wheel hitch, I'd do it for FREE and you buy the fuel and a BBQ sandwich and a beer. JESUS....we're talking about 'around the block'...yes, BLOCKS ARE BIG IN TEXAS.
BUT....I'm in the 'pineys, of east texas and don't have a 5'er hitch.
Here's the 'weight' info from from the Texas DMV.

Weight Certificate, if applicable
Required for all out-of-state trailers, unless the empty weight is shown on the out-of-state title or Manufacturer's Certificate of Origin.

The 'empty weight' SHOULD be on your out of state title, and even if it is NOT, there is usually a 'yellow' sticker FROM THE MANUFACTURER that shows that information, somewhere on the exterior of the trailer. Mine is on the driver's side at the front of the RV and it is also a 2014. I bought mine in Kentucky and did NOT have it weighed.
The sticker should have this info ON IT.

Recreational Vehicle Cargo Carrying Capacity
Dry Weight xxxxx. VIN xxxxxxxxxxxzxxxx
The weight of the cargo should not exceed
xxxx kg or xxxxx lbs

I REALLY hope somebody steps up and shows these folks some TEXAS HOSPITALITY.

Well the OP asked for help on 3/19 and said they wanted to move it "Monday or Tuesday" which would have been a week ago now.

I just need a $7 inspection and a $12.50 scale receipt (per Texas law, to change the out-of-state title to my name), and paying $300 just to get that seems...possibly avoidable.

It's worth it if it's a must, mind you. Start-up costs for any new adventure are to be expected and well-received.

And maybe no one would dare do this apart from a company paid to do it. A friend at church has a monster truck, but he ain't got that fancy fifth-wheel adapter in the bed.

And my smart car already informed me that he'll be busy sipping kombucha and eating kale and quinoa.

First question that enters my mind is why do you need to have it inspected and registered if you are not going to be pulling it anytime soon? Why not wait and do this the day before you are ready to go? Take it yourself, get an appointment with CW it takes about 15 min. to do inspection, then go to sub courthouse to registrar. Maybe an hr. at courthouse.

Second question, have you contacted a mobile unit to do this service, to inspect an RV you do not need to take it into a shop. All they check is running lights and trailer brakes.

Again, thank you for all the advice and time you all took to say something to this serious newbie...

The trailer NEEDED to be inspected and weighed for the registration, in order to change the title over to my name, which I had 30 days to do from the purchase date.

Our new home (la Arca de Noël) has been taken around the block and is sadly residing again in a covered parking lot.

I have gone to see her three times since. She's looking chipper and ever so ready for a new adventure with my husband and me--kind of like a dog at just the mention of "going for a ride". Oh, well. Inhabiting the beaut' happens much more in, like, August...

Do crawl up on the roof and check the caulking in the seams. They are notorious for splitting open. Great looking camper!

The answer is yes. She got it inspected and weighed. Hopefully that'll be enough to get it registered.
