Sorry if this is a silly question, but some travel with the propane on to keep their fridge cold. Wouldn't that mess up the fridge since the tt is moving all around?

Nope... won't hurt a thing as the movement will keep the liquid in an ammonia fridge (absorption R/V type) moving about (inside the cooling coils) and not causing any issues.

It's when you are stationary and out of level when problems can happen.

If you don't need your tow vehicle to go somewhere I see no reason to disconnect.
As far as leveling, you can use blocks under tires or your front jacks, or both.
It's not a bad idea to unplug your electrical to your tow vehicle whether you are connected to shore power or not.
This is why I unhook:

It's hard to find a fuel stop to turn this big rig around and in, and truck stops are usually a lot higher on their diesel.

So I stage my trips into 350 mile segments. Unhook at the campground and then go to a smaller station to buy diesel, usually save at least 10 cents a gallon.
Yes I know that's only $3.60 cents.

I know if you park in Walmart parking lots or the like, they actually prefer that you don't unhook. I'd still unhook the electrical just to make sure you don't drain your battery but you should be totally fine to leave the camper connected. Make sure you set your emergency brake and chock just to be on the safe side.
