Hi. We Live in New Zealand and own a 2017 MBLE Surveor travel trailer in Oregon.
We used the trailer for 6 weeks in 2017 and are coming back in June this year to do a 12 week trip.
The Murphy bed mattress was sagging after the trip and we would like to replace it.
Any suggestions on where we could get a better version

You can buy a new mattress. I have found that backpacking style quality mattress is very comfortable on top of an average RV mattress. They are small and easy to store.
Not sure if this would work with a Murphy bed because they are heavy. Having said that, we replaced our FR mattress with a memory foam mattress and we love it. Just as comfortable as our stick house mattress.
