I don't know if horses are available for rent, but the Kentucky Horse park has a great campground. It is attached to an area where lots of horse activities happen. I suspect you can find out about rentals be visiting their website, The Horse park is just outside of Lexington.
Three dining recommendations - I like the Red State Bar-B-Que that is just up the road. Also find one of the Ramsey's Diners and try their Kentucky Brown - it is an absolutely delicious heart attack on a plate! Ramsey's also has great desserts. My favorite location is at 4391 Old Harrodsburg Rd. Finally Cheapside Bar and Grill. After eating at Cheapside, walk up the side of the plaza and there is a very good bourbon bar - hundreds of bourbons available to try, some come in at >$100 a glass!
