When is Fresh water tank full?

How do you know when to turn off the water while filling up your fresh tank on a Sanibel?

Since the underbelly is all insulated, I assume its not a matter of waiting for water to run out of some overflow port.

Let me add a related question. The book talks about adding bleach-water to the tank and filling it up to sanitize. In the Sanibel, there is a "Sanitize/Winterize" position which just feeds what you've got in the hose/bucket in thru the pump and into the piping.

How would I get bleach-water into the tank itself? Sounds like its a matter of pouring it into a funnel held at a higher level than the hose inlet? Is that correct?

For sure there is an overflow port. Check under you' ll see it somewhere.

Not familiar with a Sanibel but I assumed the water tank physics would at least be similar. If not, please disregard.

So, I am on their web site and looking at image 6 of 8 (Prime Time Manufacturing, Manufacturers of travel trailers and fifth wheels) and I see the city water connection but no gravity fill port.

I assume that one of the valves switches the pressure from "direct to plumbing" to "direct to water tank."

Is the small round "hole" to the right of the black circle the vent?

If that is how your system works, you can use the same method I use to add sanitizer (1/2 cup of bleach in my case - 40 gallon water tank) to the hose prior to connecting it to the camper. When you turn on the water, it will push the bleach into the tank and plumbing; diluting it to the correct level as the tank and lines fill.
