The rally "officially" starts with dinner on Sunday, the 14th. However, it is impossible to park 800 rigs in a single day, so folks can and do start coming in a day or even two days before the rally.
Your rally fee includes six nights of camping (Sun - Friday) Any nights before or after the rally are at your expense for camping...when you arrive, you'll have to pay the fairgrounds directly for your extra nights. The parking team will be on duty and ready to park "early arrivals" beginning on Wednesday afternoon.
Rally check-in and badge procurement will start Friday and continue Saturday and Sunday (and probably Monday.)
With more than 1,700 people to feed at breakfast every morning and on the 4 nights when dinners are served, it is impossible for the caterer to prepare "specialized" menus like gluten-free, but I think you'll easily find something that you can eat. Breakfast is typically scrambled eggs and some kind of meat...ham, bacon, sausage; biscuits and gravy, fruit and coffee & juice.
Dinners are typically bar-be-que, , maybe steak one night, and are accompanied by veggies, salads, often a starch (potatoes or pasta) and iced tea / lemonade. So, while you may not be able to eat every dish at every meal, I think you'll find plenty that you can eat.
