Hot water in toilet ??
Started testing out water system and when hooked up to city water the left handle in shower is cold and the left is hot. When I turn on the pump then it switches to left being hot and right being cold. The toilet even flushes hot water. I’m assuming something isn’t right! From what I can see the pump does run into the cold line so not sure what’s going on.

I'm a little confused (but that's easy to do)!
I assume you mean that on city water the left handle is cold and the right is hot, and on pump they switch to normal (Left hot, Right cold).
Sounds like the city water is hooked up to the wrong line.
How old is the RV?

is your 'city' water shut off when you use the rv pump?

No when we were using the water from our fresh tank we weren’t hooked to our city water hose

Hot water in toilet ??
Happened to me, probably my thread the poster above is thinking of. Ultimately what happened is the city water connection is plumbed into the hot water side of the system. I was able to get to my connections and fix it.

Since it's a 2021 I would let the dealer figure it out.
If you want to work on it a little you could pull the city water inlet or access it from the inside of the RV and see which line it's hooked to. You may have to remove a panel inside a cabinet to see the backside of the city water.

Bama rambler is right you should let the dealer fix this because if you break something or find its more involved than you thought and bring it to the dealer he will probably say you broke and refuse to work on it under warranty. Go thru the rig completely find any other major gleaming issues and bring it back to the dealer. Be ready but, some dealers are great and some, will lets just say less than stellar. Let us know what happens.
