As far as bypassing the water heater, the bypass system can consist of one, two or three valves. Yours just has one and that is correct as there will be a one way check valve on the hot water output line.

This thread may help explain (post #5 especially):

BTW, from your pic in your first post, your hot water tank is currently bypassed with the way the valve is turned.

I do believe that is the first "One Valve System" I've ever seen. mine have always been two or three valves.

Mine is a one-valve system. Just point the handle to where you want the water to go.

As noted the tank is bypassed on the photo.

? Where is the check valve?

Is the T a check valve. The check valve would have to be in the line from the bypass to the tank.

It is integral to the nipple on the hot side of the tank.

The internal check valve (sometimes referred to as a backflow preventer or a one-way valve) is in the threaded nipple coming out of the hot water output line at the water heater as Bruce stated above. The check valve only allows water to flow one way, which is out of the water heater. When the actual bypass valve is used, then water cannot backflow into the tank from the hot water line due to the check valve

Of note, a check valve, unlike a manual valve, maintains pressure in the hot water system independently of the cold water. The only way to release the pressure is via the HOT low point drain, or a hot water faucet.
