Valve confusion on Palomino Solaire

I'm not sure if I need to turn all three of these valves to Winterize? My Class A was super obvious, but this is our new 2021 FR Solaire??

Simply yes.
The two on the back of the water heater are the bypass valves. Both should be positioned 90 degrees from where they currently are.
In your second picture that is the antifreeze valve, it switches the pump from the fresh water tank to the antifreeze pick up hose. That should also be turned 90 degrees so that you can pull in the antifreeze from the bottle with the attached hose.
