Turning the switch disconnects the water pump from the fresh water tank. The water pump will now be connected to the short hose.

Winterizing the water system. You place the hose in the jug of RV antifreeze and turn on the water pump. The pump will then draw in the antifreeze to winterize the pipes. You'll need around 4-5 gallons of antifreeze.

Do this
before you add antifreeze. Those valves allow you to bypass the water heater and effectively connect the hot and cold pipes in to one system. If you don't engage the bypass you would have to fill the water heater with antifreeze, which will take several gallons
, before it would flow in to the hot water side piping. After you bypass the water heater go outside and drain it for the winter. Make sure to release the pressure valve
before you remove the tank drain plug or you'll get a very high pressure shower...
There are several threads in the Mercedes Motor Home sub forum with a lot of good info on how to winterize, and de-winterize your coach.
