Battery Replacement 12v vs 6v

How do I tell if the RV house batteries are 12v or 6v?

You have 12 volts.

On sixes there are fewer wires. A single wire from a plus to a minus terminal. Single wire to ground. Single wire to positive.

You have a wire that is split and goes to two positives. A
Second black wire splits to two negatives.

Also twice as many ports for water. 12 instead of 6.

Actually that would be 6 instead of 3
