Can anyone help me figure out my drain/valve configuration?

Whoever told you to leave your grey tanks open was offering an opinion. It's definitely not a "should." Empty the tank using the valve you think is the galley then close the valve, then run water in the kitchen sink - a lot of water. Then open that valve again. Does more water drain?
My galley valve is located through the frame near the kitchen area. My bathroom grey and black valves are located in the "convenience center".
It's pretty easy to get tissue or other solid wastes screwing up the sensor. If you have a black tank flush, use it. If not, run a hose down the toilet and try get some water moving. Dump, refill and repeat this as necessary. Adding a bag of ice to a 3/4 full black tank and driving around for a while is totally old school, but works as well.
