We found the folding faucet would leak while trailering when the handle would get bumped by stuff we left in the sink while trailering.
To resolve the problem, I found out we just needed to depressurize, not empty, the water before trailering. To depressurize, I turn off the water pump and open both hot and cold water faucets on the outside shower. When the pressure has been released (water stops flowing), close the faucets and the outside shower. That has been sufficient to prevent leaks into the sink. This assumes water heater is not running while trailering (I only turn on the water heater occasionally in the winter while camping).
When we arrive at camp, I make sure the galley faucet is off, and turn the pump back on.
Opening the low point drains can further empty and depressurize the water system, but mine are underneath the camper. If I want to drain the water tank, I simply open the valve on the water tank. For winter storage, I will open the low point drains with sink and outside shower valves open, as Moosure mentioned, and drain all the water out. Since our garage doesn't go below freezing, this is sufficient winterization.
