Propane water heater erratic

My TT is a 2013 A-Frame, Rockwood model A-122-BH…
Water heater is not sensing water is cooling and needs to come on to keep water hot. I can turn the furnace on, reset the hot water heater switch and the hot water does come on - which is weird. But goes off too soon as water is warming when valve turned on.
I think this is a piezoelectric spark but it must work since the heater does come on. It’s just not receiving info that water temp is cool and needs to come on.
Can anyone direct me to how to change that sensor? Or is it something else?
BTW - the lines are purged by lighting the gas stove. Reset button (on the unit) does not “get thrown”. Model SW6D by Suburban
