i'm currently in a 30 amp park, with a 50 converter

they told me not to run more than one of my air conditioners,
because it could trip something [lose power] for me, as well as some neighbors

It's OK, but as you said don't run both a/c or your electric water heater with 1 a/c

The reason "they" said not to run both ACs on 30 amps is that the start up amps on 2 ACs can exceed 40 amps. The run amps on 2 ACs is about 24 amps.

I have a 2017 Cedar Creek Silverback 29IK and I run it on 30 amp circuits most of the time. I usually do not run the front AC at night. The water heater is usually on propane. The frig is on electric and everything works great. I have tripped the circuit breaker on my generator when dry camping though.

30 amp running on a 50 circuit?

I hope this is not a stupid question. How about the reverse? I know there are converter plugs on Amazon that will allow you to plug into a 50 amp circuit. I do not plan on adding any additional load on my 30 amp trailer but I am wondering if there are any advantages or disadvantages to using the 50 amp side when both are available?

No advantage to the 50A other then it may have less wear. I would suggest to get the adapter so you have an option if the 30A is bad or loose also I have heard of someplace being 50A only.

Well, since most campers are still 30 amps, the 30 amp plug gets used more often. They are typically looser and fail more often.

On the other hand, using the 50 amp side leaves your 30 amp cord exposed to the potential of higher current (due to connection problems perhaps) before the first 30 amp protection at the main in your panel.

There will never be more load in your camper since your 30 amp main breaker will prevent that by tripping.

That is incorrect. The 30 to 50 amp dogbone ties both sides together making everything work. Just can not use everything.

Yes, verify that it is wired as a 2 pole and not a single Pole or you will only.get power to one side of your Camper! Experienced this situation on Labor Weekend this year!

I am laying here in Houston, 72F, 98% humidity, watching me 55 in tv, AC running @ 68 F, cool and dry with my 50 amp plugged into my 30 adapter...My #2 AC is turned off. Cold front coming in and drop temps into 40s and I will run my electric fireplace no issues...

In short, yes. Just be careful not to overload the system. With that said, I was given the following little chart when I started RV'ing. Maybe it will help you as well...

RV Item Electrical Draw

Coffee maker - 8.3 amps
Converter - 8 amps
Hair dryer - 9 to 12 amps
Microwave - 13 amps
Refrigerator - 2.8 amps
Roof a/c 13.5 amps
TV - 1.5 amps
Toaster - 8 to 10 amps
VCR - 2 amps
Electric skillet- 6 to 12 amps

You can put it on the legs L1 and L2 where there are split at the distribution panel of the RV going into the main circuit breaker. Lou stated such in post #6.
