Dewinterizing Champagne

This is my first year trying to dewinterize a Champagne. I'm confused by all these levers and which position they should be in for dewinterizing. Does anyone know? Thanks.

Looking at your picture it looks to me like you have the valves in the correct position. put water in your potable water tank start your pump and flush out the pink at each faucet and toilet. You could also hook up to city water and do the same if there was no antifreeze put in the FW tank.

It all depends on what stage of dewinterizing youíre at. The valves on your picture appear to be in the Ďnormalí position, not the Ďbypassí position for the red and blue lines (no idea on the white, I donít know those lines). In the Ďnormalí position, whateverís in the lines can reach the water heater.

This is where itís important about which stage of the dewinterizing you were at. If you had already flushed out the antifreeze and done your sanitization, then yes, that would be the correct position for filling your water heater. If not, and your lines still had the antifreeze in it, then in that position you may have ended up with antifreeze in your water heater. It wonít hurt it, but it will now take a lot of flushing to dilute it enough that you donít taste it anymore.

Right now you have no hot water. The one shut of going to the hot side is closed off. all the others are open.

Incorrect.

The valve coming out of the water heater for the hot line is open in the photo.
The bypass valve (the one connected to both the red (hot) and blue (cold) is closed. (for normal use)

That valve is NOT a feed line into the hot tank. That is accomplished by the lower inlet valve. (blue line) The water goes INTO the tank via the cold line and OUT of the tank via the red line.

You want the bypass valve closed so when you draw hot water at a faucet, you are not drawing/mixing both hot and cold water into the hot line. Again, you want the water entering the tank on the cold side and exiting on the hot side. Hence the middle valve (bypass) needs to be closed.

I have that same picture. If only that entire "box" was labeled "Water Heater".
