wintering with solar

I'll be retiring soon, and plan on spending the winters in the sunbelt. I'm think of getting around a 500 watt solar setup, to assist in the electric bill, and possibly a 1-2 day boon docking if needed. Like I said I don't plan on Boon docking a lot. So does any one have a set up, where they would use the solar just to do a offset of paying the metered power somewhat? Thanks
