Chris, Welcome to the Aviator family! You did get a good buy on that unit. You would think if the dealer went through the work of replacing the laminate they would have at least used a similar wood colored sheeting. Maybe the grey was what they had around. Post up pictures of your improvements. It always interesting to see how people customize their campers.

The laminate surface pealed loose.... Didn't know that was even possible, but it's good to know. Must have been extra humid in there for awhile.

Aviator pass through sliding tray

The following photos are of a tray I assembled to slide either direction. The tray rides on HDPE (high density polyethylene) or cutting board strips. The top is held down by the quarter round so it does not tip up when extended. I have a material list with dimensions somewhere and will add it later. The sterilite containers fit snugly and pass through the opening without touching. The side rails are screwed down through the bottom rail with additional "El" brackets for support. All wood to wood surfaces were glued and screwed.

Nice work on the mods! I am glad you were able to post them. It always interesting to see what other owners do and a good way to get new ideas. Hard to believe it has already been six years since the Aviator was produced. They seem to be holding up well although I did have my Domectic refrigerator fail earlier this year. That is quite a project to replace. The hallway is not wide enough to move the refrigerator in either direction. Since moving the kitchen was out of the question, I had to take out the bathroom door assembly, cut out the bedroom door frame, and take it out the back door!
