16fq water heater bypass access

Brand new to forum but have lurked here for some time. I've looked high and low and can't find how to access the hot water tank bypass valves on my 2021 16fqbl. Not wanting to winterize at this time, just gathering all the info I can on our new RV. Thanks!!

Your questions are model-specific so we need to know what brand a 16FQ is. That way I can move it to the correct area.

On my 2019 16FQ, I have to access the bypass valves from under the bed. I have to actually get underneath the bed and reach around to the water heater.
I'm attaching a few pictures. The first is my water heater as seen from under the bed. The other 2 are pictures I saved from someone showing how they cut an access hole at the top of the bed under the mattress, to be able to reach in from above. I haven't made this modification, but thinking one day I probably will.

Thank you so much!! So those must be three way valves. Are those hinges factory installed?? Trailer is in storage or I'd check it myself.
