The water heater switch turns on the propane heat function. The electric heat switch is on the water heater itself, accessible from the outside. You can use these switches independently, or both at the same time. With the outside switch off, and the inside switch on, you will use gas only.
The way mine was wired up, the jacks are outputs from the stereo, not inputs to the stereo. However, these are easily changed by taking the panel off the side of the cupboard and moving the cables from one jack to another. I did this to send audio to the stereo from my TV.
What do you mean by back feed? There is a splitter behind the preamp, that splits the signal to give TV to the preamp jack, and FM to the stereo.
