Hello,
We are waiting for our new Isata 5 which just made it to the paint shop and are looking for a source for bedding for the 66.5 by 75 in King bed, Where did you find yours?
An RV Short Queen is 60x75 and a Short King is 72x75, so you are right in the middle. Unless you have customs fitted sheet made, I would try a Short King and see if the extra 6" side to side could be pulled under the mattress. At least the length is right.
I've had good luck with regular Queen sheets made for a deep mattress. A regular Queen is 60x80 you're long in one direction but short in the other. On deep sheets you can just about make it work, but they are still a little shy/tight along the sides.
IMO its been an OK compromise for be benefit of having SO much more selection and ease of purchase from them being regular sheets.

We r using king sheets. If you already have a set try it.
So funny you posted on the weekend I am modifying our "sort of king" bed to a queen short. We had two sets made by a local seamstress. Not sure why the designers thought some where in between was a good idea. Wait until you decide to replace the mattress! $1200.00 for the custom size verses $256.00 for a queen short. Hence the real reason for the mod. I would be happy to send you ours if you want them. LOL

I'm impressed, custom sheets. Sure not an RV for anybody over 6 foot or not wide enough, fold out couch is probably bigger, oh forgot it's a jackknife.
