What is this fitting for?
There are 2 of these on my walls in a 2011 Dynaquest, what are they for?

I believe that is the remote Thermostat sensor. A lot of times the T-stat is in the tower so it can't detect the temp properly. One for the front and one for the rear.

I have a drawing from Winnebago that calls out that piece. Placed in zones and feed back to thermostat.
