I think your f250 will do fine, particularly if it has 4.30 gears. Don't be afraid to rev it as needed. Other owner's have reported a great benefit to using the transmission in manual mode when towing in the mountains.
I have read every towing review or test I could find about the 6.2 Ford and found most reviews to be overwhelming positive. It seems to me that 6.2 ford might be the strongest towing currently produced HD gasser. The 2017+ Superduty probably widens that gap a bit more with the lighter aluminum bodies, 25 lb/ft increase in torque, and torque-shift G transmission that's optimized for the 6.2. The very few reviews that complain about a lack of power seem to be limited to the those with the 3.73 rear axle ratio rather than the 4.30.
From what I have read, the engine also seems to be cheap to maintain and extremely reliable with very few problems reported. This is particularly impressive when you consider how many are on the road and are worked hard. Check out the Ford Truck Enthusiasts website, 6.2 forum.
I'm not a fanboy of any one truck manufacturer but I'm willing to give credit where credit is due.
