The CPAP should have a label listing the power requirement. I'd guess it is not very high...but continuous. The batteries/inverter may very well be able to power them.

Would love to run the CPAP machines off the inverter, but only the frig is power through the inverter and nothing else.

Post the power requirements of your CPAP. It usually is on a label stuck to the unit. If it doesn't need a lot of power, you may be able to run both fridge and CPAP(s) off the stock inverter. I suspect the fridge plugs into an outlet dedicated to the inverter. To test the inverter with the CPAP(s) plug an extension cord into this outlet.

If the inverter can't handle both the fridge and CPAP(s) than a second invert will be needed. It could feed a dedicated outlet in the sleeping area.

Next is whether the battery can power the inverter(s) long enough. If not, more batteries will need to be added.

Another approach would be different CPAP machines that can run on battery power. Potentially even the RV's battery.

You may want to verify if the CPAP machines have any special power requirements...such as "pure sine wave"...
