Let me say.. this is my first experience with the tankless HWH.. I bought the TT used.. and it was already installed. My research shows they cost, mostly.. between $500 - $700 (installed). I have only had the camper a week, so I haven't used it on a camping trip yet. After reading the user manual and comments found on the internet.. I have come to these conclusions.
As far as using up your fresh water.. that isn't a concern for me. I have never camped where there wasn't city water available. But if I did, I would just be conservative with the water.. like we all are when using a conventional HWH with a 6 or 10 gallon tank.
The only concern I would have, while hooked up to city water.. is filling up the gray water tank faster because I have endless hot water available.. and might be inclined to take a longer shower. But.. I mostly camp by myself, 2 or 3 days at a time.. so that probably wont be a problem. And.. if I'm camping in a commercial CG, with sewer hookups.. its really easy to dump the full tank.
The advantages I see...
Only burning propane when I turn on the hot water (not to keep 6 gallons hot all the time).
Endless supply of hot water (when hooked to city water)
No need to drain a "tank".. or be concerned about build up in the tank.
No need to bypass HWH when winterizing.
With all that being said.. I am not sure I would spend the $$ to put a tankless unit in.. I was ok with the 6 gallon HWH on my previous camper. But,.. since the tankless HWH is already there.. I think I am gonna like it.
