Most of the better kitchen faucets come with 3/8” supply lines already connected at the valve body. Most faucets in RVs have 1/2” posts that have been connected to with 1/2” PEX and a 1/2” swivel nut with a washer inside of it. If you get a new faucet with 1/2” posts to connect to, it wil be a simple swap-out. If you get a new faucet with the supply lines already attached, just buy a couple of push-on 1/2”x3/8” stops/shutoffs. Cut the PEX, plush the new shutoff onto it and then connect the faucet’s 3/8” compression end to the shutoff. Using shutoffs instead of just reducing couplings will cost a little bit more, but having shutoffs for the kitchen faucet will be handy. No special tools will be required for this — cut the PEX with a razor blade or copper tube cutters (if you have one) unless you want to buy an inexpensive cutting tool for PEX/CPVC.
