Countertops

I have a 2014 Rockwood 8281WS that we have had for a little over three years. The kitchen countertops are the cheap countertops and have started warping and I want to replace them. What would be the easiest thing to replace with that will last? Has anyone attempted a project like this? Any help is appreciated. Thanks.

I've never done it in a RV but if I needed replacement counter tops I would call my favorite Solid Surface countertop installer. Something light weight and durable. The Home Depot type would probably baulk at the Job, but the custom guys would look at it as a challenge. Heck, they may have scraps laying around to do the job.
