That's what I've wondered. The problem is, I'm doing this for the interest/experience. I can more easily stay at a campground and get full hookups. So, IMO, it should be less than what a campground would cost- especially in that it's largely dry camping.

You're exactly right. They have you park off to the side/out of the way and it is typically dry camping. But at the same time, their generosity is worth a lot. It's a unique thing to offer and place to stay. I'm excited about the prospects. Just trying to find that fine line of worthwhile to me and them.

No idea, but I found a boat/swamp tour in Mississippi! That's going to be one heck of an overnight. 
They say that they strive for about 50/50 split between farms and wineries:

We have stayed at Harvest Hosts sites in many locations. Not just wineries. Farmer's markets, breweries, llama farms. Great opportunity especially on Friday, Saturday when weekend restrictions are in place at State campgrounds.

Night #1 at a HH location. Going into it, I knew the biggest negative and decided that it didn't bother me- it was 30 miles off of the highway. Unsurprisingly, we got a late start this morning, so I was stressing about making it on time. But the speed limits were generally 45-55, so it wasn't awful. And, it was a pretty drive. The bonus is that I don't think we have to backtrack tomorrow- just more side roads to get back on the highway.
First up, the grounds are pretty. We are in a n extended parking lot, but it's mostly long grasses (not messy, though). It's surrounded by cattle fields and their vineyard.
Second, the lady that did our wine tasting was friendly. More so, no one really looked down at us for having the kids with us. And our wine tasting giver interacted with them. I'm very thankful for that.
Finally, I spent way more than I planned! Each wine flight/tasting was $10; so $20 for wife and I. Then it was a $20 bottle of wine (a dessert wine happened to be sweet enough. And finally tip. I was on for $43.

I don't have one, but it seems like you definitely could. I'm actually hoping to pickup a generator when we get into Las Cruces or Austin.

Truth be told; I'm very likely maxed out. Haven't weighed it in a while, but with the Weber Q and 12x12 Coleman screen tent. Heck, I might be slightly over GVWR.

My wife and I talked about the money side of it- yes, this one was expensive. Equal to or more expensive than RV parks which are a lot more convenient to the highway. She wondered if it was really worth it?
My take is that we didn't quite know what we were in for. This is literally the first "wine tasting"/vineyard we've ever been to. Honestly, I didn't even know there was a charge for the flight of wines/tasting. There was a cost for small wine glasses included in it (that would have been cheaper had we had them already). All told, we probably didn't have to buy a bottle and it could have been just $20+tip. Or made some kind of other small purchase and spent less. It was much quieter than Walmarts or truck stops- I was outside after midnight and it was dead quiet. Being so far back side roads, there wasn't even road noise. We heard coyotes earlier in the evening.
The money question is- would I do it again? (Especially considering I have plans for Monday night at another winery.) Overall, yes I would. I might search out non-wineries as it suits our taste better and would widen the purchase opportunities.
Monday is definitely out of the question- but not because of anything to do with the HH experience; my battery/camper simply isn't equipped to deal with low 30-degree temps and needing the furnace. I ran my camper battery dead by about 12:30; I couldn't run my sleep machine. I disconnected one of my two truck batteries and plugged into the umbilical cord. I got about 5 hours of furnace + sleep machine use before that too was very dead. In the morning, I switched back to my good battery on the truck and ran it for about 45 minutes while we got up and ready to get back on the road. I give myself a D for that performance.
