Welcome. That's pretty soon to start a full time. "Camp" in your driveway a few nights ASAP to learn about your new RV and work out any bugs (there will be some). We have the identical r-pod model. I agree, it has everything you need for full time. Not too small if you spend your days outside anyway, hiking, etc.
Are you intending to do any boondocking at all? If so, there are things you need to learn ASAP about limitations and needed upgrades. Your new 12V-only fridge is great, but it will not run long on the dealer-provided battery. Upgrades to a LiFePO4 battery and additional solar will be needed to boondock more than one or two nights without a generator. If you intend to always have a shore power hookup, then never mind. Otherwise, start asking questions and searching the forum - this forum is a great resource for info.

Since you'll be full time, you may want to upgrade the murphy mattress immediately. You will have a depression in the factory mattress that will have the two of you rolling to the center, within a month. This one worked well for us. You don't need to buy one with a folding seam - a regular foam mattress will still let you fold up the murphy platform. And your bed is a normal queen size, so you don't need to buy an over-priced RV size.
