I would like to change 20lb propane tanks for 30lbs. Is it just a matter of moving the top brackets?

Yes! 20 and 30lb tanks have the same diameter but different heights. I just did this to mine. Found some older tanks online for a great deal!

This is the left and right side with them installed.
